Fresh blueberries and jam make these bakery style blueberry muffins a reason to get up in the morning. Featuring a unique sugar crust crown and blueberry jam filled center, with a buttermilk-based batter these never seem to last long!

Blueberry Muffins with Buttermilk Recipe At-A-Glance

Prep Time 10 minutes Bake Time 30 minutes  Total Time 40 minutes

Yield 12 Blueberry Jam Muffins

Ingredients  Butter – Pure Cane Sugar –  Eggs – All-Purpose Flour- Baking Powder – Baking Soda – Salt – Buttermilk – Bourbon – Blueberries – Friends Drift Inn Bourbon Cardamom Blueberry Jam.

Equipment – Mixer is nice, but you can use a spoon. 2 medium mixing bowls.  Measuring cups and spoons.  Muffin tins and paper liners.

Blueberries Muffins with Buttermilk – They Rise Up!

We like big bite muffins.  You know.  The kind that your local bakery sells from those shiny glass counters.

These blueberry muffins are better than those.  Plus, they are easy to make!

One of the secrets to baking is using buttermilk.  That kickstart of buttermilk’s lactic acid activates the leavening agents (baking powder and soda) making for an impressive texture and rise.

We bake with buttermilk several times a week – especially for muffins, biscuits and scones.

It is no secret, blueberries and buttermilk have a thing going on. 

Like strawberries and cream, blueberries and buttermilk compliment each other’s flavor profiles.  Blueberries give sweetness and buttermilk gives a sassy twang.  They are a couple you should get to know.

Muffins are one of the first projects most 4-Hers learn to bake.  The ingredients are generally on hand, the recipe is easy to mix, and the results are nothing short of amazing.  Homemade muffins rule! 

Like most quick breads, you do not need to mix these very much.  In fact, the less you mess with them the better they will be.  Just mix enough to moisten.

For best results, let the batter set a few minutes before you spoon it into the muffin tins.  Give the buttermilk and leavening time to work their magic.  That little extra step gives blueberry muffins an extra lift.

Confessions of a Baking Addict

Jordan Marsh muffins were apparently a big deal back in the day.  A Boston-based department store, Jordan Marsh was eventually swallowed up by Macy’s.

Frankly, when I read about department store muffins, I could not fathom what the fuss was about.

You know me, I like fancy streusel or lots of big grained sparkling sugars for muffin toppings.  This simple sugary crust idea seemed lame.

But Jordan Marsh was on to something.

Couple that with the Cardamom Blueberry Jam center and honey let me tell ya – these are muffins you will make time and time again.

Can I Use Frozen Blueberries Instead of Fresh?

If blueberries are in season, I encourage you to use fresh berries.

Frozen berries will work.

Thaw the amount you need, to prevent muffins from being “gummy” around the blueberries.

To keep muffins more appealing, rinse thawed blueberries and pat them dry with a paper towel.  Do this twice.

Next, take advice from the US Highbush Blueberry Council  and coat berries with flour or corn starch.

They note:

Whether frozen or fresh, blueberries will sink in a batter that is too thin to support them, or if too much air has been whipped into the batter. To fix this, avoid over-blending when you are mixing your ingredients together. Also, tossing blueberries in corn starch or flour will help them stay suspended.

Jam-Filled Muffins – Easier Than You Think

Jam filled muffins are a fun surprise for your guests.  That little dab of jam puts a smile on even the crankiest sleepy head.

If you have never made muffins with a jam center, no worries.  You fill the muffin liners half full, spoon in a dollop of blueberry jam, and cover it all up with the second half of the buttermilk batter.

You taste the blueberries first.

Cardamom Blueberry Jam contains no high fructose corn syrup, no extra coloring agents and no preservatives.  One taste and you know the difference.

You can warm it in the microwave to loosen up the firmness.  There are chunks of blueberries in there, many sourced from right here in Kentucky.

And of course, we like to kick things up a bit.

So, we created a second blueberry cardamom jam except we added bourbon!  How can you go wrong?  

Both blueberry jams will work will in this muffin recipe.

What is Cardamom?

Cardamom is a spice grown in the Near East.  If you have ever enjoyed a chai tea, it most likely contained cardamom.

According to Saveur Magazine   editors “Cooking with Cardamom” article  :

Native to the Indian subcontinent, cardamom is used to add exotic depth to dishes from all over the world. Its flavor is wonderfully complex—herbal, spicy, floral, and slightly sweet. From rich stews to sweet-savory desserts to refreshing drinks, it has a breadth of potential uses.

Quit spending money at the bakery!  Muffins are simple to make-and fun to share.  We love these for breakfast and Sunday Brunch.  Eat in your pj’s – nobody is watching!

Blueberry Muffins Recipe with Buttermilk and Jam

Description

With a sugar crusted top and a surprise blueberry jam filling, these blueberry muffins are a muffin classic!  Inspired by Jordan Marsh Department Stores. 


Ingredients

Scale
  • ½ cup (1 stick)  organic Unsalted Butter, room temperature
  • 1 cup of Pure Cane Sugar + ¼ cup for topping
  • 2 large Eggs,  organic preferred
  • 1 teaspoon Kentucky Bourbon
  • 1 ½ teaspoons Baking Powder
  • ½ teaspoon of Baking Soda
  • ½ teaspoon of Salt
  • 2 cups All-Purpose Flour, whisked and spooned into measuring cup
  • ¾ cup of Buttermilk, shaken
  • 2 cups of fresh Blueberries (could substitute thawed frozen blueberries)
  • ¼ cup Friends Drift Inn Blueberry Cardamom Jam warmed with 1 teaspoon water

Instructions

  1. Preheat oven to 375. 
  2. Line muffin tin with papers. 
  3. Cream butter, sugar, eggs and bourbon together until light and fluffy in a mixing bowl. 
  4. Whisk together baking powder, soda, salt and flour in large bowl.
  5. Add blueberries and coat with flour. 
  6. Alternately add buttermilk and dry ingredients to the butter mixture, stirring only enough to moisten.
  7. Let the mixture set for a few minutes.  Make yourself a cup of tea.  Shows blueberry muffins in tin, half full with blueberry jam spoooned in.

  8. Place 2 tablespoons of batter in each muffin tin. 
  9. Add 1 teaspoon of Friends Drift Inn Bourbon Cardamom Blueberry Jam to center of each muffin.
  10. Cover each muffin with 2 tablespoons of additional batter.
  11. Sprinkle 1 teaspoon of sugar over the top of each muffin.
  12. Bake about 30 minutes, rotating tin halfway through the cycle.  Muffins will be brown on the top, and a toothpick inserted should come out clean…. if you do not hit the jam pool.  Giggles
  13. Let muffins cool in tin about 5 minutes.  Use a butter knife to loosen any stuck muffins. 
  14. Cool on a baking rack.  Once cooled, store covered in the refrigerator.

Serving Suggestions

Pile them high and watch them fly!  Blueberry muffins are easy to stack and make a grand presentation. 

Serve them alongside fresh honeydew and peaches with a little lemon zest. 

Oatmeal with a little blueberry jam stirred in, and a hot cup of ginger tea served with a muffin on the side is a great way to start your weekend. 


Notes

Buy buttermilk.  Keep it in your refrigerator and bake with it often.  Buttermilk helps quick breads brown and gives a great lift when used with baking powder and baking soda.

You could always substitute vanilla for bourbon, but with vanilla prices what they are go on and use the bourbon!  You can sip a little too!
