Okra Pickles We Cannot Get Enough!

If you wondered where I have been this week, the okra crop has come in. When Edna Lewis said one needs to pick okra twice a day, she was not kidding. I’m up to over 60 jars of okra pickles and the madness continues.

For market, Friends Drift Inn Farms grows six to eight 200 foot rows of okra.

Now that may sound like excess, but here’s the thing. Okra has not caught on here in my region of Appalachia. I am one of the few in the county that grow it. We have had some fun trying to sell it at the Farmers Market, nobody knows what it is. One of our tips for market gardeners is to offer recipes along with produce, it really does drive sales.

In the fall, my friends in the know will be circling the barn looking for the okra pickles. They are just that good! I make several different recipes including a hot, a sweet, and a spicy.

I grow Cowhorn Okra, a variety that stays tender even up to about 5 inches. The bigger okra I put in pint jars, the little 2-3 inch babies I like to pickle in tall 12 ounce quilted jelly jars. Baby okra makes cute garnishes for cocktails….and my friends enjoy displaying the quilted jars on their bar. Well to be honest they really enjoy okra as a garnish with Bloody Mary Cocktails

At the barn, we serve okra pickles along with cheese plates and or relish trays. My favorite way to eat okra pickles is alongside a scoop of pimento cheese.
