Yellow Summer Squash Recipe Saute and Garnish with Mint

Grandma had a real love of mint, the herb showed up in any number of dishes. This was a mid-afternoon snack, way back then, served with fried cornbread. Summer Squash with citrus and mint worked for Grandma. Seems nowadays it works for Martha Stewart too. Just when I thought I was being so clever! LOL

One of the easiest ways to prepare summer squash is a simple sauté. It’s quick. It’s easy.

Mint, lemon juice and hot pepper flakes give this simple summer squash sauté an exciting dash of flavors. Sometimes I add just a little grated parmesan cheese just before serving.
