Oat Scones Hearty Breakfast or Brunch

Nutty Flavor – Hearty Texture

Oat Groat Scones challenges my view on just what a scone “should be.” Too many breakfast tea brunches with ethereal light and lovely grazings have prejudiced my palate.

Oat Groats are nutty. They are chewy. A whole grain offering iron and fiber, oat groats are hearty and filling. When baked into scones, oat groats compliment a smear of apple butter or a dark honey.

I am not sure if it is the buttermilk, or the addition of oat bran flour, but the crumb texture of this recipe is finer than I expected. Yet, the toasted oat groats bring an earthy richness I have never experienced in my “belief system” of scones.

Serve up alongside bacon, grits, and eggs on a morning when Spring Vegetable Gardening is in on your agenda. These savory oat scones will carry you through!
