Fried green tomatoes just happens to be one of my favorite things in the world. My Grandmas made them; fat slabs of cornmeal crusted deliciousness. Charlie’s daddy had a way of making them crisp, tart, and hinting of bacon grease. (Oh! Excuse me, as a food writer I should say “bacon drippings! Giggles) I used to quarrel at Vernon for swiping tomatoes before they were ripe, but when he started firing up the cast iron skillet; all was forgiven.

Fried green tomatoes taste like lazy summer days in the Kentucky mountains.

We grow lots of heirloom tomatoes at Friends Drift Inn Farm. Chef Sean Brock insists that White Wonders, a tomato which stays green, is one of the best varieties for frying. I have been blessed to share the seasonal appetizer cooked by Brock at Husk and Chef Matt Corbin from The Blue Raven. Both boys are from the Appalachian mountains. The White Wonder heirloom tomato first championed by Alice Waters of Chez Pannisse, is meaty with a very small seed cavity making it the perfect variety for fried green tomatoes.

But it was Chef Jeremy Ashby who let me see fried green tomatoes in a whole new light. Chef Jeremy is one generation removed from the hills, however when he walks through my garden beneath the mountain’s shadow, he seems very much at home.

Ashby is no stranger to his Granny’s cast iron skillets either! He takes fried green tomatoes to a whole new level.

Level?

Yes, literally and figuratively. He stacks the mellow ‘maters into towers slathered with cream cheese spread made with country ham, and green onions. He pops in a few honeysuckle flowers for side garnish, with a crown of fried frog legs around the perimeter. He tops the presentation with warm freshly made peach pepper chutney, and finishes the appetizer with his signature micro greens in this case radish sprouts.

Fried green tomatoes…they are slices of heaven from the hills.

I got a couple of bites, just before the production crew and Pointy Toed Shoes Sisters devoured every last morsel of Chef Jeremy’s presentation. Luckily, there was cream cheese spread, and some uncut green tomatoes waiting for my luncheon pleasures the next day!
