Eggs Baked over Sweet Potatoes

Sunny Eggs for Winter Days

Charlie and I are on the go kind of people. When our schedule conflicts, we move to single serving meals that satisfy.

The idea of using a water bath may be a little new to you, but it’s no big deal.

Breakfast, Sunday Brunch or Late Night Dinner?

When I come home from work, I start the oven and put on 2 quarts of water to boil. By the time I change clothes, check through the mail and switch on the tube the kitchen is ready and waiting. I grab an egg from the refrigerator that my own hens at “Fort Cluck” produce.

Brown eggs from Friends Drift Inn Farm.

A “one dish wonder” you cook baked eggs in the same dish you eat out of. Less dishes and less hassle! YAY! Depending on your mood, baked eggs are an option for breakfast, brunch, dinner or as a late night snack after a night on the town.

Baked eggs over sweet potatoes are a guilt free comfort food Take your fork and dig in, letting the eggs runny goodness engulf savory sweet potatoes.
